Ingredients
- 4 large eggs, hard-boiled
- 2 tbsp mayonnaise
- 1 tbsp sour cream
- 1 tsp Dijon or mild mustard
- 1–2 tsp finely chopped onion
- 1 small dill pickle, finely chopped
- ½ tsp sweet Hungarian paprika
- ¼ tsp salt
- Black pepper, to taste
- 1 tbsp chopped fresh parsley or dill
- 4–6 slices rye, sourdough, or crusty white bread
- Butter, optional
Method
- Peel the eggs and mash them with a fork, leaving some small chunks.
- Mix in the mayonnaise, sour cream, mustard, onion, and pickle.
- Add the Hungarian paprika, salt, pepper, and parsley/dill.
- Taste and adjust—more paprika for warmth, pickle for tang, or mustard for sharpness.
- Spread generously onto buttered bread.
- For a classic touch, sprinkle a little extra paprika on top and add a few slices of fresh cucumber or tomato.
Hungarian-style tip: Use sweet Hungarian paprika, not smoked paprika. A tiny pinch of caraway seed can also give it a more distinctly Hungarian flavor.
