Hungarian Cucumber Salad

Ingredients

  • 2 large cucumbers
  • 1 tsp salt
  • 2 tbsp white vinegar
  • 1 tsp sugar
  • 1–2 cloves garlic, finely grated
  • ½ cup sour cream
  • ½ tsp sweet Hungarian paprika
  • Black pepper, to taste

Method

  1. Slice the cucumbers very thinly—a mandoline works beautifully.
  2. Toss with the salt and let sit for 20–30 minutes.
  3. Squeeze the cucumbers firmly to remove excess liquid.
  4. Mix vinegar, sugar, garlic, sour cream, and black pepper.
  5. Toss the cucumbers with the dressing and refrigerate for at least 30 minutes.
  6. Before serving, sprinkle generously with sweet Hungarian paprika.

Traditional touch: Some Hungarian families skip the sour cream and serve the cucumber in a simple vinegar-sugar-garlic dressing, then add sour cream on top. Thinly sliced onion is also a common addition.
