Hungarian Rakott Krumpli Recipe

Rakott Krumpli is a traditional Hungarian layered potato casserole made with potatoes, hard-boiled eggs, Hungarian sausage, and sour cream. The top is baked until beautifully golden and crispy.

🥔 Ingredients — 6 servings

  • 1 kg potatoes
  • 6 eggs
  • 250–300 g Hungarian sausage (kolbász), sliced
  • 400 g sour cream
  • 100–150 g grated cheese, optional
  • 50 g butter
  • 1 small onion, optional
  • Salt
  • Black pepper
  • 1 teaspoon sweet Hungarian paprika, optional

👨‍🍳 Method

  1. Cook the potatoes
Boil the potatoes with their skins until just tender. Let them cool, peel them, and slice into rounds.
  2. Cook the eggs
Hard-boil the eggs for about 9–10 minutes. Cool, peel, and slice.
  3. Prepare the sausage
Slice the Hungarian sausage into thin rounds. You can lightly fry it for a few minutes to release its flavor.
  4. Prepare the baking dish
    Butter a large ovenproof dish.
  5. Layer the ingredients
    Arrange:
    • A layer of sliced potatoes
    • Salt and pepper
    • Sliced eggs
    • Sausage
    • A layer of sour cream
Repeat the layers until everything is used.
  6. Finish the top
Spread a generous layer of sour cream over the top. Add grated cheese if desired and dot with a little butter.
  7. Bake
Bake at 200°C (400°F) for about 35–45 minutes, until the top is golden brown and bubbling.
  8. Rest and serve
Let it rest for 10–15 minutes before cutting.
